De Moor is a youthful yet deeply inspired producer in Burgundy, founded by Maud and Vincent de Moor, who bring fresh energy and a reverence for natural winemaking to this historic region. Based in the Chablis area, their vineyards span several appellations including Chitry, Bourgogne, and Chablis itself, planted on classic Kimmeridgian and Portlandian limestone soils that shape each wine’s distinct minerality and tension. Since launching their project in the mid 2010s, De Moor has embraced organic and biodynamic principles, with minimal intervention in the cellar, wild fermentations, little to no sulphur, and no filtration, allowing pure terroir expression and vintage character to shine through.
A perfect introduction to the De Moor range, this négociant cuvée blends fruit from different plots each year, sourced from organic farmed vineyards of trusted grovers. Fermented and aged on its lees in used foudres without bâtonnage, it captures the house’s pure, hands-off style.
The 2024 vintage is bright and lean, offering zesty lemon notes, a touch of pastry richness, and a refreshing saline edge with plenty of texture.
