François Rousset-Martin is one of Jura’s most compelling modern growers, crafting precise, site-driven wines from the slopes around Château-Chalon. Trained in biology and oenology in Burgundy, he brings a meticulous, almost Burgundian approach to his work, focusing on parcel-by-parcel vinification and a clear expression of terroir. Working organically with minimal intervention, his wines are often made in an ouillé (topped-up) style, highlighting purity, freshness and detail rather than oxidative character.
The result is a range defined by energy, tension and clarity, combining Jura’s distinctive identity with a refined, modern precision, wines that have quickly gained a cult following among enthusiasts.
From a secluded parcel in Château-Chalon planted with old vines, this Savagnin is aged extensively on its lees (40months), bringing depth and precision in equal measure. The nose reveals citrus, dried fruit and subtle honeyed notes, layered with herbal and saline nuances. On the palate, it is both rich and tightly structured, with vibrant acidity, a mineral core and a long, savoury finish. Powerful yet finely balanced, this is a deeply expressive Jura white with remarkable energy and ageing potential.
