Domaine Jean François Ganevat is one of the Jura’s most influential and admired estates, renowned for wines that combine ancient traditions with an uncompromising approach to natural winemaking. Based in Rotalier, in the southern Jura, Jean François and Anne Ganevat farm a remarkable collection of old vineyards according to organic and biodynamic principles, preserving rare vine material and allowing each parcel to express its own identity. Through careful vineyard work and minimal intervention in the cellar, Ganevat has become a reference point for wines of purity, complexity and exceptional character.
Savagnin Antide is a pure expression of Jura’s signature grape variety, showcasing Savagnin through Ganevat’s precise and non oxidative approach. Sourced from organically farmed vineyards on the region’s characteristic marl soils, the wine is made to preserve the freshness and energy of the variety rather than following the traditional oxidative style of Vin Jaune. Hand harvested grapes undergo spontaneous fermentation with indigenous yeasts before ageing in old oak barrels, allowing texture and complexity to develop while retaining a crystalline mineral core. Aromas of lemon peel, green apple and white flowers are layered with chamomile, hazelnut, herbs and subtle saline notes. The palate is concentrated yet elegant, combining Savagnin’s natural intensity with vibrant acidity, fine texture and a long, savoury finish.
