I Vigneri di Salvo Foti represents one of the most important guardians of traditional Etnean viticulture, led by Salvo Foti, a pioneering figure in the revival of ancient vineyard practices on Mount Etna. Working with a network of small growers and historic ungrafted bush vines trained in the alberello system, the project is rooted in meticulous hand farming on steep volcanic terraces. The philosophy is centred on preserving genetic diversity, working with massal selection, and maintaining pre industrial vineyard methods that predate modern mechanisation. In the cellar, intervention is deliberately minimal, with indigenous fermentations and gentle extraction designed to express the raw energy, altitude and volcanic identity of Etna rather than impose stylistic winemaking influence.
Vinupetra Etna Rosso is a field blend rooted in the steep northern slopes of Mount Etna, where old bush trained vines grow in volcanic sand, ash and basaltic rock at high elevation. The vineyard work is entirely manual, reflecting the extreme gradient and fragmented terraces that define the site. Nerello Mascalese forms the backbone, typically supported by smaller proportions of traditional Etnean varieties such as Nerello Cappuccio and other historic field selections, depending on parcel composition. Fermentation takes place spontaneously with indigenous yeasts, followed by a long and gentle élevage in large neutral vessels that preserve transparency and structure without overt oak influence. The wine is defined by tension and aromatic precision rather than weight, with a profile that moves from red cherry, wild strawberry and dried rose into graphite, ash and smoky volcanic stone. The palate is linear and energetic, with fine tannins, bright acidity and a long, saline mineral finish that reflects both altitude and volcanic origin.
