I Vigneri di Salvo Foti is the historic Etna based project led by Salvo Foti, one of Sicily’s most influential viticultural figures and a key pioneer in the revival of traditional Etnean viticulture. Working with a network of small growers and ancient ungrafted bush vines trained in the alberello system, the project is rooted in meticulous hand farming on steep volcanic terraces. The philosophy is centred on preserving genetic diversity, working with massal selection, and maintaining pre industrial vineyard methods that predate modern mechanisation. In the cellar, intervention is deliberately minimal, with indigenous fermentations and gentle extraction designed to express the raw energy, altitude and volcanic identity of Etna rather than impose stylistic winemaking influence.

Rosso IGT is a traditional Etnean red built around a field blend of indigenous varieties grown on the volcanic slopes of Mount Etna, where sandy ash, basalt and lava stone dominate the soils. The vines are trained in the alberello system and cultivated entirely by hand on steep, fragmented terraces that require absolute precision in vineyard work. The blend is typically led by Nerello Mascalese, often supported by Nerello Cappuccio and other historic local selections depending on the parcel. Fermentation occurs spontaneously with indigenous yeasts, followed by élevage in large neutral vessels that preserve transparency and structural clarity without oak influence. The wine is defined by energy and lift rather than weight, showing bright red cherry, wild strawberry and pomegranate layered with smoky ash, dried herbs and crushed volcanic stone. The palate is linear and finely grained, with vibrant acidity, delicate tannins and a long, saline mineral finish that reflects the high altitude volcanic terroir.
