Domaine Ballot-Millot is a historic family estate based in Meursault in the Côte de Beaune, with roots in the village stretching back several centuries. Today led by Charles Ballot, the domaine is widely regarded as one of the reference producers for classical Meursault and Côte de Beaune whites, combining traditional viticulture with a precise, detail driven cellar approach. The estate works across a range of appellations including Meursault, Puligny Montrachet and Bourgogne, farming limestone and clay rich vineyards with a strong focus on soil health, balance and optimal ripeness. Vineyard work is meticulous and low intervention, with yields carefully managed to preserve concentration and natural acidity. In the cellar, vinification is restrained, with indigenous fermentations, careful lees management and élevage in French oak barrels used to build texture while maintaining clarity and site expression.
Bourgogne Blanc is sourced from carefully selected parcels on the lower slopes and flatter vineyard sites around Meursault and the wider Côte de Beaune, where clay limestone soils provide a balance of ripeness and freshness. Although a regional wine in classification, the fruit benefits from the same rigorous vineyard standards applied to the domaine’s village and Premier Cru holdings. Harvest is carried out by hand, followed by gentle pressing and fermentation with indigenous yeasts. Élevage takes place in French oak barrels, typically with a modest proportion of new oak to provide structure without masking the purity of fruit. The wine shows a refined profile of lemon zest, ripe pear and white peach layered with hazelnut, white flowers and a subtle flinty mineral character. The palate is supple yet focused, with a fine balance of richness and acidity, a lightly creamy texture from lees ageing and a long, elegant finish that reflects the precision and classical style of the domaine.
