Éloïse Hauvette is a quietly iconic figure in French natural wine. Since taking over her domaine in the foothills of the Alpilles in the late 1980s, she has transformed a rugged Provençal landscape into one of the region’s most respected biodynamic estates. Nestled just outside Saint-Rémy-de-Provence, the vineyards are planted across limestone scree and ancient terraces, where the relentless mistral wind and limited water availability naturally restrict yields and concentrate the fruit. Working entirely by hand and with deep respect for the rhythm of nature, Éloïse has cultivated a reputation for producing wines of remarkable depth, structure, and longevity, all without artifice, additives, or new oak.
Cornaline is her flagship red, a blend of Grenache, Syrah, and Cabernet Sauvignon from low-yielding vines grown on sun-exposed slopes. In 2018, a cooler, balanced vintage with a dry harvest period allowed the grapes to ripen slowly and evenly, preserving freshness and aromatic clarity. Fermented with indigenous yeasts and significant whole-cluster inclusion, the wine aged for 18 months in large, neutral Austrian foudres to avoid the imprint of oak while developing texture and complexity. The result is savoury and layered, wild cherries, garrigue herbs, olives, and dark spice, all carried by firm tannins and a mineral backbone. A wine built for ageing, but already quietly expressive.
