Mas Jullien stands as one of the defining domaines of the Terrasses du Larzac, founded and shaped by Olivier Jullien, whose work since the late nineteen eighties has helped elevate the region to national prominence. The estate centres on a patchwork of organically farmed parcels scattered across the stony terraces above Jonquieres, where altitude, diurnal swings and limestone rich soils combine to create naturally balanced fruit. Farming is meticulous and entirely manual, with low yields, careful selection and a constant focus on soil vitality. In the cellar Jullien favours a thoughtful, low intervention approach built on native yeast fermentations, gentle extraction, careful élevage in a mix of neutral barrels and large oak, and an unwavering commitment to presenting the landscape with precision and restraint.
Terrasses du Larzac Autour de Jonquieres 2021 comes from several old vine parcels of Carignan, Mourvèdre and Syrah rooted in limestone scree and red clay around Jonquieres. The 2021 vintage was cooler and more temperate than preceding years, marked by a mild spring and a fresh summer that allowed long, even ripening while maintaining acidity. Harvesting was carried out by hand in multiple passes to capture ideal maturity across the varied plots. Fermentation took place with native yeasts, using slow, gentle extraction to highlight aromatic lift and avoid excessive tannin. The wine was then aged for around eighteen months in older barrels and large foudres, allowing depth to develop without overt oak influence. The resulting style is poised and complex, combining dark berries, garrigue herbs, savoury spice, mineral length and the refined structure that defines the Terrasses du Larzac at its most classic.
