Weingut Joh. Jos. Prüm is one of the most iconic estates in the Middle Mosel, widely regarded as a reference point for classical Riesling from steep blue slate vineyards. The estate remains family run and is known for an uncompromising focus on site expression, precision and longevity rather than modern stylistic influence. Its vineyards are concentrated around Wehlen, Graach and Bernkastel, where some of the most celebrated slopes of the Mosel are composed of Devonian slate. These soils store heat during the day and release it at night, allowing Riesling to ripen slowly while retaining electric acidity. Viticulture is extremely selective and labour intensive, with multiple hand harvesting passes to separate fruit by ripeness level and to ensure perfect balance between sugar, acidity and phenolic maturity. In the cellar, fermentation is spontaneous and traditionally slow, taking place in large old oak Fuder casks with extended lees contact and minimal intervention to preserve purity and transparency.
Wehlener Sonnenuhr Kabinett is sourced from one of the Mosel’s most legendary vineyards, a steep south west facing slope above the village of Wehlen defined by deep blue slate and exceptional drainage. The site is renowned for producing Riesling of remarkable finesse, where low alcohol, vibrant acidity and delicate residual sugar come together in a style defined by tension and purity rather than weight. The Kabinett level is harvested at an earlier stage of ripeness compared to Spätlese and Auslese, capturing a lighter, more filigreed expression of the vineyard. Grapes are hand selected in multiple passes, with a focus on pristine fruit that has reached physiological ripeness while maintaining razor sharp acidity. Fermentation occurs spontaneously in traditional Mosel Fuder casks and proceeds very slowly, often leaving a small amount of natural residual sugar that is balanced by the wine’s piercing acidity. The wine is intensely aromatic yet featherlight, showing lime zest, green apple and white peach alongside slate, citrus blossom and subtle herbal notes. The palate is airy and finely etched, with electric freshness, delicate sweetness and a long, saline mineral finish that captures the quintessential elegance of Wehlener Sonnenuhr in Kabinett form.
