Mark Haisma is an Australian born winemaker who established his domaine in Burgundy after extensive experience in both the Rhône Valley and Beaune, building a reputation for a hands on, intuitive approach to Pinot Noir. Based in Gevrey Chambertin, he works primarily as a micro negociant, sourcing high quality fruit from trusted growers across the Côte de Nuits and Côte de Beaune. His style is defined by a balance of freshness and generosity, often using whole bunch fermentation where appropriate and favouring relatively open, expressive elevage to highlight fruit purity and site character. The wines tend to show a modern, energetic interpretation of Burgundy while still respecting appellation identity.

Les Fremiets is one of Volnay’s more structured Premier Cru sites, located on the upper mid slope where limestone rich soils bring tension and aromatic precision. The vineyard typically produces Pinot Noir with both finesse and a slightly firmer backbone compared to more perfumed Volnay lieux dits. In this cuvee, Haisma leans into the site’s natural structure with a measured proportion of whole bunch fermentation to enhance lift and complexity. Extraction is kept controlled to preserve clarity, and elevage in barrel is used to frame rather than dominate the fruit. The wine shows red cherry, raspberry and wild strawberry, layered with rose petal, spice and a subtle mineral undertone. The palate is finely balanced, with elegant yet present tannins and a long, detailed finish that reflects both Volnay finesse and the site’s underlying structure.
