A Los Viñateros Bravos is the project associated with Chilean winemaker Leonardo Erazo, working with the ancient bush vines of the Itata Valley. The project focuses on preserving the old viticultural traditions of the region, working organically and dry farming vines that are largely own rooted. País is central to the range, with Erazo using the variety to explore the contrasting granite and volcanic soils found across Itata. The wines are made with minimal cellar intervention, allowing the old vines and distinctive geology to remain at the forefront.

Volcánico País comes from more than 100 year old, own rooted País bush vines planted on basaltic soils of volcanic origin. The grapes are hand harvested and fermented spontaneously with native yeasts in 3,000 litre concrete vats, with two punch downs per day during the initial fermentation. The skins are basket pressed by hand, with the wine then completing fermentation before further maturation. Extraction is deliberately restrained, producing a pale, energetic red rather than a heavily extracted País. Redcurrant, wild berry and cassis sit alongside tomato leaf, black pepper, tobacco and smoky mineral notes, with fine tannins, bright acidity and a long, savoury finish.
