Daniel and Frederike farm three hectares in Uhlbach, near Stuttgart, producing around 5,000 bottles per hectare since launching their independent winemaking journey in 2020.  From the beginning, they embraced a hands-off approach, focusing on intuitive farming to restore soil health and foster biodiversity. Their vines thrive alongside wild grasses and insects, rejecting the trend of overly “clean” vineyards.  In the cellar, their process is low-tech and hands-on: hand-harvested grapes are foot-crushed, gently pressed, and fermented with indigenous yeasts. The wines age in old barrels or tanks within a historic vaulted cellar from 1546, maturing slowly before being bottled by gravity with minimal intervention.

Red currants, spiced red cherry, pink peppery and violet notes. Light and crunchy, lovely chilled.

Winemaking Manual harvest, destemmed grapes undergo a short maceratiomn in open vats for about 5 days, fermented in stainless steel with indigenous yeast where then the wine rests for about 6 months.  Unfiltred, unfined, little SO2 added at bottling.
