Daniel and Frederike farm three hectares in Uhlbach, near Stuttgart, producing around 5,000 bottles per hectare since launching their independent winemaking journey in 2020.  From the beginning, they embraced a hands-off approach, focusing on intuitive farming to restore soil health and foster biodiversity. Their vines thrive alongside wild grasses and insects, rejecting the trend of overly “clean” vineyards.  In the cellar, their process is low-tech and hands-on: hand-harvested grapes are foot-crushed, gently pressed, and fermented with indigenous yeasts. The wines age in old barrels or tanks within a historic vaulted cellar from 1546, maturing slowly before being bottled by gravity with minimal intervention.

A fresh and easy drinking white with notes of aromatic peach, chamomile, meadow flowers and white pepper. Palate is juicy and textural.

Winemaking Manual harvest, Johanniter and Riesling made up to 55% of this blend, with the remaining varietals being added in smaller amounts. Johanniter and Riesling pressed immediately, while the others are added to the direct-pressed juice to soak for about a week. This added a lovely structure to the wine, with an attractive textural crunch and salivating bitters. After pressing the wine returns to tank to finish the fermentation and age for 6 months. Unfiltred, unfined, no SO2 added at bottling.
