A Tuscan classic with a slight twist from Montenidoli. You wouldn't expect a macerated Vernaccia di San Gimignano, however the result is a structured though delicate and elegant white. It has aromas of hay, white pepper and almond, the palate is medium bodied with notes of citrus, dried herbs, a slight nuttiness and great minerality.
A lovely white to pair crustaceans, oysters and prawns, sushi, quiche, seasonal vegetarian dishes and vegetable-based flans, tannin-rich foods such as artichokes or asparagus, and iron-rich foods such as liver or spinach.

Winemaking Montenidoli’s vineyards are organically grown. For fifty years no herbicide, insecticides or any other chemicals have been used. The must macerates long on the skins before fermenting to capture the character and the flavours of the land from which it springs.
