Domaine Hugo
Domaine Hugo was established in 2016 by Hugo Stewart in the rolling chalklands of Wiltshire, close to the ancient downland between Pewsey and Marlborough. After two decades working with organic growers in both Britain and France through his earlier projects, Stewart set out to create a small estate rooted in regenerative farming and the cool climate potential of southern England’s chalk. The vineyards, planted between 2016 and 2018 on south and southeast facing slopes, are farmed organically with a focus on biodiversity, careful canopy management and extremely selective hand harvesting. In the cellar Stewart follows a restrained traditional method approach, favouring native fermentations, slow ageing, minimal additions and long lees contact to capture purity, detail and the natural tension of the region’s soils.
Traditional Method 2021 is produced from Chardonnay and Pinot Noir planted on pure chalk, harvested by hand during a cool and balanced season that offered bright acidity and precise flavours. The 2021 growing year began with a mild spring before settling into a long, steady summer that ripened fruit slowly and evenly. Grapes were pressed gently as whole clusters and fermented with native yeasts in a mix of stainless steel and neutral barrels to preserve freshness while adding subtle texture. The base wines were blended and bottled for secondary fermentation, followed by extended lees ageing to build complexity and fine bead. Disgorgement was carried out with a minimal dosage to retain the wine’s natural tension. The resulting style is vibrant and detailed, showing citrus, orchard fruit, chalky minerality and a refined, persistent finish.
