Charlie Herring is the tiny English wine project of Tim Phillips, based near Lymington in Hampshire’s New Forest, less than three miles from the sea. After gaining winemaking experience in South Africa, France and New Zealand, Tim returned to England and began restoring an abandoned 19th-century walled garden, planting it with Chardonnay, Riesling and Sauvignon Blanc. The vineyard is exceptionally small, with vines growing on gravel soils within the old walls, which retain heat while the nearby coast brings a strong maritime influence. The surrounding seven-acre smallholding includes old orchards, woodland and ponds, with biodiversity at the heart of Tim’s farming.
Everything is done on a tiny scale and with minimal intervention, producing both still and sparkling wines in extremely limited quantities. The wines are distinctive and unconventional, combining English freshness and acidity with long ageing, texture and a strong sense of this unique coastal site.
One of England’s more elusive sparkling wines, The Bookkeeper comes from Tim Phillips’ tiny walled vineyard near Lymington, just a few miles from the Hampshire coast. Made by the traditional method and released only when Tim feels the wine is ready, it spends an unusually long period ageing on its lees before disgorgement.
Crisp apple and preserved lemon meet white flowers, subtle brioche and gentle spice, with the extended ageing bringing extra depth and texture. The palate is incredibly focused, combining bright English acidity with fine bubbles, a steely mineral backbone and a distinctly saline edge. Precise, energetic and beautifully mature, with remarkable persistence and complexity.
