Eric Bordelet is widely recognised as the benchmark producer for artisanal cidre and poiré in France, having redefined cider making through a fine wine lens. Based in southern Normandy on the edge of the Armorican Massif, he farms old high stem orchards using organic and biodynamic principles, with a strong focus on biodiversity, soil life, and full manual work in the orchard. His philosophy treats cider as a site driven agricultural expression, with fermentation managed to preserve orchard identity rather than to standardise flavour.

Sydre Argelette is sourced from very old mixed apple orchards rooted in rocky, decomposed schist and granite soils known locally as argelette, which give the cuvée its name and its distinctive mineral backbone. The fruit is harvested from multiple traditional cider apple varieties selected across bitter, bittersweet, sharp and sweet profiles to build balance without reliance on any single dominant type. Slow pressing with long juice settling precedes spontaneous fermentation with indigenous yeasts. Fermentation takes place in tank followed by extended maturation on fine lees, allowing texture and depth to build while retaining precision. Bottling is carried out with natural residual sugars to create a fine, persistent mousse through secondary fermentation, with no added gas and minimal intervention throughout.
