Jessica Litaud crafts wines from biodynamically farmed, steep limestone slopes in Vergisson, Maçonnais, including rare parcels in the newly classified Pouilly-Fuisse Premier Crus. Trained with Jean-Marie Guffens and Jean-François Ganevat, she returned in 2019 to restore her family’s 5.5 ha domain using organic and minimal-intervention methods. Her cellar is focused on gentle élevage in older barrels, native yeasts, and very low sulphur. The result is crystalline, mineral-charged Chardonnay that balances precision with vibrancy.

From a tiny parcel of clay-limestone soils in Saint-Véran, Les Pommards is hand-harvested before a slow whole-bunch press, with fermentation and around 10 months' ageing in old oak barrels. The result is a beautifully poised Chardonnay, combining white peach, citrus and white flowers with hints of hazelnut and chalky minerality. The palate is generous yet finely focused, balancing creamy texture with vibrant acidity and a long saline finish. Elegant, energetic and remarkably precise, it perfectly captures Jessica Litaud's refined, terroir-driven style.
