Domaine Tawse is a Beaune based Burgundy estate founded in 2006 by Canadian entrepreneur Moray Tawse, who built the domaine through the acquisition of high quality vineyard holdings across both the Côte de Nuits and Côte de Beaune. The project was established with the ambition of operating at the top tier of Burgundy, assembling an extensive range of Premier and Grand Cru sites across appellations including Gevrey Chambertin, Chambolle Musigny, Nuits Saint Georges, Volnay, Meursault, Puligny Montrachet and Beaune. From the outset, the philosophy has centred on precision viticulture, with organic and biodynamic principles applied throughout the vineyards alongside strict yield control, rigorous sorting and highly selective harvesting. Winemaking is overseen by Pascal Marchand, whose influence brings a disciplined, low intervention approach shaped by his long experience in Burgundy, favouring gentle extraction, restrained intervention and élevage in French oak to preserve clarity, texture and site expression across the range.

Savigny lès Beaune 1er Cru Les Vergelesses Blanc comes from steeply sloped vineyards composed of sandy marl and limestone, where 31 year old Chardonnay vines are planted on well drained soils that naturally encourage tension and aromatic precision. The site is worked with a focus on balance between ripeness and freshness, with yields kept in check to maintain concentration. Fruit is whole bunch pressed using a pneumatic press with only light crushing, before undergoing both alcoholic and malolactic fermentation in barrel. The wine is then aged for 16 months on lees without bâtonnage, preserving a fine, linear texture rather than richness. Elevage is carried out in French oak barrels, with 25 percent new oak sourced from Tronçais and Allier forests, using a light toast designed to integrate gently rather than dominate. One racking is carried out prior to bottling, followed by fining and a light filtration. The wine shows citrus peel, green apple and ripe pear, with white floral lift, subtle hazelnut and a distinct chalky mineral edge. The palate is precise and structured, with fine acidity, restrained texture and a long, clean finish that reflects both the site and the controlled, detail driven winemaking approach.
