Domaine Tawse is a Beaune based Burgundy estate founded in 2006 by Canadian entrepreneur Moray Tawse, who built the domaine through the acquisition of high quality vineyard holdings across both the Côte de Nuits and Côte de Beaune. The project was established with the ambition of operating at the top tier of Burgundy, assembling an extensive range of Premier and Grand Cru sites across appellations including Gevrey Chambertin, Chambolle Musigny, Nuits Saint Georges, Volnay, Meursault, Puligny Montrachet and Beaune. From the outset, the philosophy has centred on precision viticulture, with organic and biodynamic principles applied throughout the vineyards alongside strict yield control, rigorous sorting and highly selective harvesting. Winemaking is overseen by Pascal Marchand, whose influence brings a disciplined, low intervention approach shaped by his long experience in Burgundy, favouring whole berry fermentation where appropriate, gentle extraction and long élevage in French oak to preserve clarity, structure and site expression across the range.
Savigny lès Beaune 1er Cru Les Lavières is a well regarded Premier Cru located on the mid slopes of the appellation, where limestone rich soils with a notable proportion of gravel and stony scree contribute to a style that is both refined and slightly more structured than the broader village level wines. The site typically produces Pinot Noir with lifted aromatics, red fruited purity and a fine underlying tension, sitting stylistically between the delicacy of northern Côte de Beaune and the more structured communes further south. In Tawse’s hands, the fruit is carefully selected and vinified with controlled extraction to preserve finesse and clarity, allowing the site to express itself without excess weight. Elevage takes place in French oak barrels with a restrained proportion of new oak, supporting integration while maintaining freshness and detail. The wine shows red cherry, raspberry and cranberry, with violet florals, gentle spice and a subtle stony mineral edge. The palate is finely balanced and elegant, with supple tannins, bright acidity and a long, composed finish that reflects both the precision of the domaine and the refined character of the site.
