Gérard Boulay, a vigneron in Chavignol, Sancerre, has been crafting wines that reflect the region's unique terroir since taking over his family's estate in 1976. His vineyards, planted on Kimmeridgian soils rich in limestone and fossils, are farmed organically with minimal intervention. Boulay's approach includes hand harvesting, natural fermentation, and aging in neutral oak barrels, allowing the wines to express their origin authentically. Notable cuvées like "Clos de Beaujeu" and "Monts Damnés" showcase the depth and minerality characteristic of Sancerre's finest sites. Boulay's wines are celebrated for their precision, elegance, and ability to age gracefully.

Sourced from Kimmeridgian limestone soils in Chavignol, this Sauvignon Blanc offers a vibrant bouquet of gooseberry, lime zest, and white flowers. The palate is precise and mineral-driven, featuring layers of grapefruit, tangerine, and a hint of white pepper. Aged on lees for eight months, it achieves a harmonious balance of freshness and texture, culminating in a long, chalky finish that reflects the purity of its terroir.
