Hervé Souhaut has been crafting natural wines in the Northern Rhône since 2005. Based in Arlebosc, Ardèche, he works with vineyards in Saint-Joseph, sourcing both old and younger vines planted on steep granite slopes. Souhaut studied viticulture before dedicating himself fully to winemaking, initially working in Condrieu and other Rhône appellations, where he developed a deep respect for indigenous varieties and low-intervention methods. His philosophy emphasises organic farming, biodynamic principles, and minimal intervention in the cellar. Grapes are hand-harvested and fermented with indigenous yeasts, with little to no sulphur added. Spontaneous fermentations, extended lees contact, and careful ageing in a combination of neutral barrels and stainless steel allow him to capture the precise expression of each vineyard site.
The L’Etrati 2024 comes from 50-year-old Roussanne vines planted on granite and schist soils on the southern slopes of Saint-Joseph. Grapes are hand-harvested and pressed gently before spontaneous fermentation in a mix of stainless steel and neutral oak barrels. The wine is aged on fine lees for 10 months, with protective vinification techniques to preserve aromatic purity and texture. It exhibits lifted floral notes, white stone fruit, and a vibrant mineral core, reflecting the granite-rich terroir. The wine is precise, structured, and expressive, demonstrating Souhaut’s mastery of natural Saint-Joseph whites.
