Hervé Souhaut founded Domaine Romaneaux-Destezet in 1993, focusing on producing natural wines from ancient vineyards in the northern Rhône Valley. His holdings, totaling 5 hectares, are situated opposite the renowned Hermitage hill in the Saint-Joseph appellation. Souhaut employs whole bunch fermentation and semi-carbonic maceration to craft wines that are lighter and more nuanced than traditional Rhône reds. His approach emphasizes finesse and purity, resulting in wines that are both expressive and approachable. Vineyards are farmed organically with minimal intervention, and in the cellar, spontaneous fermentation and extended lees ageing are combined with minimal sulphur use to allow the terroir to fully express itself.
The Sainte-Épine 2024 comes from the Sainte-Épine vineyard, a very steep terraced slope located directly behind Souhaut’s residence in Tournon-sur-Rhône. The vineyard is composed of old Syrah vines planted on granite and schist soils, with ancient stone terraces making it one of the most challenging sites in the appellation. Grapes are hand-harvested and undergo whole bunch fermentation with semi-carbonic maceration, then aged on fine lees for 10 months. The vinification is low intervention and protective, preserving aromatic purity while allowing the minerality, depth, and elegance of this exceptional vineyard site to shine.
