Domaine Derain is a family‑run estate in the Saint Aubin appellation of Burgundy. Founded by Dominique Derain in 1988, the domaine has farmed organically and biodynamically for decades, now overseen by Julien Altaber and Carole Schwab who continue the estate’s natural wine philosophy and careful attention to site expression. The vineyards for the En Remilly premier cru lie on high limestone‑rich slopes with south‑eastern exposure near Puligny‑Montrachet and Chassagne‑Montrachet, and vines planted here draw mineral energy from hard marly soils. In the cellar the team works with indigenous yeasts and minimal intervention to let terroir and varietal clarity shine.
Saint Aubin 1er Cru En Remilly Blanc 2021 is made from 100 % Chardonnay from this premier cru site. The grapes are hand harvested and undergo direct pressing and fermentation in oak barrels. The wine is aged on lees in wood until ready for bottling, without fining or filtration. It shows floral and orchard fruit aromatics with vibrant acidity, mineral tension and a long, balanced finish that reflects both the limestone influenced terroir and the classic expression of Saint Aubin 1er cru.
