Jessica Litaud crafts wines from biodynamically farmed, steep limestone slopes in Vergisson, Mâconnais, including rare parcels in the newly classified Pouilly-Fuissé Premier Crus. Trained with Jean-Marie Guffens and Jean-François Ganevat, she returned in 2019 to restore her family’s 5.5 ha domain using organic and minimal-intervention methods. Her cellar is focused on gentle élevage in older barrels, native yeasts, and very low sulphur. The result is crystalline, mineral-charged Chardonnay that balances precision with vibrancy.
The 2023 vintage of 'La Marechaude' is sourced from a single vineyard site known for its deep, clay-limestone soils. The growing season was warm, leading to ripe fruit with concentrated flavours. Grapes were hand-harvested and underwent whole-cluster pressing. Fermentation occurred with native yeasts in older barrels, followed by ageing on fine lees to develop complexity. The wine was bottled unfined, unfiltered, and with minimal sulphur. It displays aromas of ripe citrus, white flowers, and a hint of spice, with a rich and textured palate.
