Pierrick Bouley was born in 1987 and trained in viticulture and oenology in Beaune before founding his own estate in Monthélie in 2016. Bouley works with 5 hectares across Monthélie, Volnay, and Pommard, focusing on premier cru parcels with distinct soils and microclimates. His philosophy centres on low-intervention, terroir-driven wines that express the unique character of each vineyard. Grapes are hand-harvested, fermentations are indigenous yeast-led, and wines are aged in carefully selected French oak barrels, with minimal sulphur, no fining, and no filtration. The aim is to highlight both village identity and individual cru expression.

Pommard 2021 comes from mid-slope clay-limestone parcels in Pommard, producing wines with more structure and depth than Volnay. The 2021 vintage was relatively warm, giving ripe black cherry and plum aromatics balanced by firm tannins and natural acidity. Grapes were hand-harvested, fermented with indigenous yeasts, and aged 14 months in French oak barrels, resulting in a powerful, structured wine with Pommard’s signature earthy, savory character.
