Eric Bordelet is one of the defining figures of modern artisanal cider and poiré production in France, having elevated traditional orchard fermentation into a category that sits comfortably alongside fine wine. Working in southern Normandy on the edge of the Armorican Massif, he farms old high stem orchards planted on granite and schist based soils, with a strong commitment to organic and biodynamic farming. His approach is rooted in biodiversity, manual harvesting at optimal phenolic ripeness, and a cellar philosophy that avoids manipulation in favour of expressing orchard site, fruit selection, and native fermentative character.

Poire Granit comes from carefully selected old pear trees rooted in decomposed granite soils that bring a distinctive linear, stony tension to the fruit profile. The cuvée is built from multiple traditional pear varieties harvested across different orchard parcels, pressed slowly to preserve aromatic delicacy, and fermented spontaneously with indigenous yeasts. Fermentation continues in stainless steel and in bottle under natural pressure, creating a fine, persistent mousse without added gas. The élevage is deliberately reductive and low intervention, preserving orchard purity while allowing subtle lees derived texture to build shape and length in the glass.
