Winemaking Manually harvested in 15 kg baskets, Whole bunch pressing and destemmed crushed grapes which were macerated, 100% fermented in stainless steel with indigenous yeasts. 60% transferred to foudre for 4 months. Second fermentation in bottle – ancestral method. No filtration nor fining.
