Domaine Roulot is one of the benchmark estates in Meursault, renowned for its meticulous parcel selection, precise élevage, and a style that prioritises tension, salinity and transparency over overt richness. The domaine works almost exclusively with old vine Chardonnay planted across a mosaic of finely defined lieux dits in and around Meursault, with farming focused on soil health, controlled yields and optimal phenolic maturity. In the cellar, the approach is highly restrained, with native fermentations, careful use of oak and a strong emphasis on preserving site specificity through long, measured élevage.

A Mon Plaisir comes from Clos du Haut Tesson, a discreetly positioned site in Meursault with shallow limestone rich soils that contribute both structure and a fine mineral backbone to the wine. The vineyard is planted to Chardonnay vines that are worked with extreme precision in the vineyard to maintain low yields and even ripening. Fruit is hand harvested, gently pressed as whole clusters and fermented spontaneously in barrel, predominantly in older oak with a small proportion of new wood to provide subtle framing rather than overt flavour. Elevage is extended on fine lees with regular but gentle bâtonnage in the earlier stages, gradually reduced to allow clarity and tension to emerge. The resulting wine is defined by citrus precision, white floral detail, crushed stone minerality and a tightly coiled, saline finish that reflects both site and meticulous élevage.
