Domaine Derain is a natural wine estate in the Saint‑Aubin appellation of Burgundy founded by Dominique Derain in 1988 and now run by Julien Altaber with his partner Carole Schwab. The domaine farms organically and biodynamically, tending vineyards around Saint‑Aubin and neighbouring villages on clay and limestone rich soils, and follows a minimal intervention philosophy in both vineyard and cellar. Derain’s approach emphasises native yeast fermentations and expressive terroir driven wines across still and sparkling styles.

Methode Traditionnelle Chut NV is a traditional method sparkling wine made from 100 % Aligoté grown in the Corpeau area near Saint‑Aubin. Because it is made entirely from Aligoté it does not qualify for the Crémant de Bourgogne AOC, but it is crafted in the same méthode traditionnelle style with a secondary fermentation in bottle. The base wine is vinified with indigenous yeasts and aged on lees for around twelve months on its lees before disgorgement without dosage, resulting in fine bubbles, bright orchard and citrus fruit notes, lively acidity and saline freshness.
