Sylvain Pataille is one of Burgundy’s most thoughtful and meticulous vignerons, quietly redefining what’s possible in Marsannay. Trained as an oenologist in Bordeaux, he began consulting for others before starting his own domaine in 1999 with just one hectare. Today, he farms over 15 hectares biodynamically, focusing on low yields, native yeast fermentations, and minimal intervention in the cellar. Sylvain is deeply committed to the expressive potential of Pinot Noir and Aligoté, working with old vines and historic lieux-dits. His wines are precise, textural, and soulful, anchored in limestone and crafted with the humility and rigor of a true artisan.
Le Chapitre sits on higher, cooler slopes with a greater proportion of limestone and active chalk, giving wines of lifted aromatics and pronounced tension. The 2021 vintage was defined by lower yields and bright acidity, resulting in a finely etched, transparent expression of Pinot Noir. Hand harvested fruit is vinified with indigenous yeasts, typically with a measured proportion of whole bunch to enhance structure and perfume. Ageing in French oak barrels, with limited new wood, preserves the purity of fruit. The profile is redcurrant and cranberry driven, with floral nuance, fine grained tannin and a long, saline finish.
