Jessica Litaud crafts wines from biodynamically farmed, steep limestone slopes in Vergisson, Maçonnais, including rare parcels in the newly classified Pouilly-Fuisse Premier Crus. Trained with Jean-Marie Guffens and Jean-François Ganevat, she returned in 2019 to restore her family’s 5.5 ha domain using organic and minimal-intervention methods. Her cellar is focused on gentle élevage in older barrels, native yeasts, and very low sulphur. The result is crystalline, mineral-charged Chardonnay that balances precision with vibrancy.
The Mâcon-Vergisson “La Roche” 2022 reflects a cooler vintage compared to the broader Mâconnais, preserving high natural acidity and energy. Harvest was timed to catch gradual phenolic ripening and freshness. Grapes were whole-cluster pressed and fermented in both barrel and tank on wild yeasts, followed by aged on fine lees with occasional stirring. Bottled unfined, unfiltered, with minimal sulphur. The wine offers crisp apricot, lime pith, wet stone, and a clear, structured finish.
