Domaine des Vignes du Maynes is based in Cruzille in the northern Mâconnais and has been farmed by the Guillot family since the early twentieth century. Julien Guillot took full responsibility for the estate in 1998 and immediately committed the vineyards to organic and biodynamic farming, making it one of the earliest adopters in Burgundy. The domaine works a mosaic of old vine parcels on limestone and clay soils at elevations between 300 and 400 metres, with many vines planted between the nineteen twenties and nineteen fifties. All work in the vines is manual, yields are extremely low, and harvesting is carried out parcel by parcel with strict selection. In the cellar Guillot follows a resolutely low intervention philosophy built on whole cluster fermentations, indigenous yeasts, no additions and long élevage in neutral vessels, aiming to transmit site, vine age and vintage character with absolute clarity.
The “Manganite” cuvée comes from old Gamay vines on manganese‑rich clay‑limestone soils within the clos. Harvest is carried out by hand with rigorous sorting in the vineyard and cellar to retain optimum fruit quality. Vinification employs Clos des Vignes du Maynes’s traditional semi‑carbonic maceration method, layering whole bunches and destemmed grapes in vats then allowing natural indigenous yeasts to drive fermentation with minimal intervention. After maceration, the wine is matured in older barrels on fine lees, with no added enzymes or chemical inputs and only minimal sulphur at bottling. The result is a vibrant red with expressive red fruit, floral lift, fine structure and a clear stony minerality that speaks of its unique terroir.
