Domaine Tawse is a Beaune based Burgundy estate founded in 2006 by Canadian entrepreneur Moray Tawse, who built the domaine through the acquisition of high quality vineyard holdings across both the Côte de Nuits and Côte de Beaune. The project was established with the ambition of operating at the top tier of Burgundy, assembling an extensive range of Premier and Grand Cru sites across appellations including Gevrey Chambertin, Chambolle Musigny, Nuits Saint Georges, Volnay, Meursault and Puligny Montrachet. From the outset, the philosophy has centred on precision viticulture, with organic and biodynamic principles applied throughout the vineyards alongside strict yield control, rigorous sorting and highly selective harvesting. Winemaking is overseen by Pascal Marchand, whose influence brings a disciplined, low intervention approach shaped by his long experience in Burgundy, favouring whole berry fermentation where appropriate, gentle extraction and long élevage in French oak to preserve clarity, structure and site expression across the range.
This Gevrey Chambertin is a village level blend drawn from multiple parcels within the appellation, capturing a broad expression of the commune rather than a single climat. Gevrey is defined by its darker fruit profile and firmer structural core compared to neighbouring villages, with Pinot Noir often showing both depth and muscularity alongside underlying freshness. In Tawse’s hands, the wine is vinified with controlled extraction to maintain balance and detail, ensuring structure develops without overwhelming the fruit. Elevage takes place in French oak barrels with a restrained proportion of new oak, allowing integration while preserving site character and clarity. The wine shows dark cherry, blackberry and raspberry, with violet florals, subtle spice and a faint earthy, mineral edge. The palate is structured and composed, with fine but present tannins, fresh acidity and a long, balanced finish that reflects both the inherent depth of Gevrey Chambertin and the precise, restrained style of the domaine.
