Hors Champ was established by Cyril Fhal after leaving the Loire Valley for the remote village of Latour de France in the Agly Valley. Drawn to its ancient bush-trained vines and steep terraces, he carefully assembled a small estate on diverse soils of schist, gneiss and granite. From the outset he committed to organic and biodynamic principles, working manually with meticulous pruning, low-yielding vines, and careful harvest selection. In the cellar Fhal embraces a restrained, Burgundian approach, favouring indigenous ferments, whole clusters when appropriate, neutral vessels, long élevage and minimal sulphur to let the vineyards speak.
Purchased from the organically certified Domaine de Rancy, the Macabeu comes from 70-year-old vines planted on the lower slopes of Montner in schist-derived soils. Aged primarily in cuve with just 15% in barrique for added texture, and with a very low total sulphur of 10mg/l, the wine is pure and expressive. Fruit is supple and attractive, with pear and peach to the fore, a hint of spice and pepper, and a saline lift on the finish.
