Winemaking Manual harvest, gentle pressing in a pneumatic press. One to two months of wild yeast fermentation in stainless steel vat of 50-70 Hecto-litres, with temperature control. Undergoes malolactic fermentation. 12 months in bottle carrying out the secondary fermentation and producing the bubbles, this secondary fermentation took place using selected biodynamic yeasts authorised by Demeter. No filtration, and no fining. Absolutely no Sulphur was added at any stage.
