A beautifully precise, topped-up Savagnin from the Croix-Sarrant parcel in Château-Chalon, close to Nevy-sur-Seille. The southeast-facing vineyard sits on ochre-coloured Lias marl with a significant limestone presence and is farmed organically with biodynamic practices. Fermentation is spontaneous, followed by 24 months ageing in 228L barrels, always kept topped up to preserve freshness, before bottling without filtration or added sulphur.
Yellow citrus and ripe orchard fruit meet spice, balsamic herbs and subtle vanilla notes. The palate is deep and beautifully textured, balancing richness with vibrant acidity, fine bitters and pronounced chalky minerality. Powerful yet wonderfully energetic, with a long, saline and persistent finish.
