Domaine Macle is a reference estate of the Jura, based in Château-Chalon and renowned for its dedication to tradition and precision. The Macle family has been making wine here since the 1960s, farming limestone and marl soils without chemicals and ageing wines slowly in a cold cellar carved into the hill. While they are best known for oxidative styles, they also produce very limited quantities of topped-up (ouillé) wines, always from estate-grown fruit and always with intensity, finesse and unmistakable Jura identity.
The Chardonnay Ouillé comes from younger vines planted on grey marl and limestone and is vinified and aged in topped-up barrels to preserve freshness and clarity. The 2019 vintage brought a dry, moderate summer that resulted in compact, mineral wines with balanced ripeness. This wine offers precise stone fruit, lemon oil, crushed shell and light hazelnut tones, carried on a taut and chiselled frame. A rare chance to see the Macle style through a lens of ouillé purity.
