Guillaume Gilles is a small grower based in Cornas, in the Northern Rhône. After working alongside Robert Michel, one of the appellation’s most respected traditional producers, he established his own domaine in 2002, starting with a small parcel in the renowned Chaillot vineyard. Today, he farms around five hectares, including the higher-altitude Les Rieux vineyard. His approach remains traditional, with organic farming, whole-bunch fermentations, indigenous yeasts and ageing in older oak barrels and large casks. His wines combine the structure and savoury character of Cornas with pure Syrah fruit, fine tannins and freshness, reflecting a restrained approach to extraction and élevage.

A traditional Cornas from Guillaume Gilles, made from 100% Syrah grown on the steep granitic slopes of the renowned Chaillot vineyard. The vines are organically farmed, with the grapes fermented as whole bunches using indigenous yeasts, followed by ageing in older oak barrels and large casks. The cooler 2021 vintage brings a particularly fresh and elegant expression, with aromas of red cherry, blackberry and violet alongside black pepper, olive and subtle smoky notes.

The palate is finely structured, with vibrant acidity, firm but refined tannins and a persistent granitic character. A savoury, precise Cornas with excellent balance and the potential to develop further in bottle.
