Pale gold and slightly hazy (undisgorged), the Col has very soft small bubbles. Aromas of toasty, creamy baked apples are contrasted by fresh acidity and a dry long finish.

Winemaking Manually harvested in 12kg baskets, Whole bunch pressing and destemmed crushed grapes which were macerated, 100% fermented in stainless steel with indigenous yeasts. 30% fermented in second fill white burgundy barrels then blended and bottled by gravity. Second fermentation in bottle – ancestral method. No filtration nor fining. No sulphur added
