Domaine Thillardon is a family estate in the Chénas cru of Beaujolais, founded by Paul‑Henri Thillardon and later joined by other family members. The estate farms vineyards organically and biodynamically across parcels including Chassignol, working steep slopes with granite, quartz and clay soils. The Thillardons prioritise traditional and sustainable practices including manual harvesting, cover cropping, and maintaining biodiversity to encourage healthy vines and expressive fruit. In the cellar they follow a philosophy of minimal intervention, using indigenous yeasts, whole cluster fermentations, and careful ageing in older vessels to allow the character of the terroir and the purity of Gamay to shine through.
Chénas Chassignol 2022 is made from 100 % Gamay grown on the Chassignol parcel. The grapes are hand harvested and undergo whole cluster maceration with indigenous yeasts before being aged for around eight months in a combination of old wood and cement vessels. The wine shows vibrant red and dark fruit aromas with floral and spice notes, fine tannins and mineral energy that reflect the granite influenced soils of Chénas.
