Les Bottes Rouges was established in 2011 by Jean-Baptiste Menigoz in Abergement-le-Petit, just outside Arbois in the Jura region of eastern France. Menigoz studied oenology before founding the estate and initially worked with 2 hectares of vineyards, focusing on native Jura varieties. In 2014, Florien Kleine Snuverink, originally from the Netherlands and previously working with Yvon Métras in Beaujolais, joined the project. Together they expanded the estate to 7 hectares across clay, marl, and limestone soils in parcels around Abergement-le-Petit and the slopes above Arbois. The estate is farmed organically with a focus on soil health, biodiversity, and minimal intervention. Spontaneous fermentations, no fining or filtration, and minimal sulphur use are standard. The winery combines neutral barrels, large oak foudres, and concrete tanks to highlight terroir expression.
Castor Chardonnay 2020 comes from 20-year-old vines planted on limestone marl soils near Arbois. Grapes are hand-harvested and fermented in concrete tanks, then aged for one year in Alsatian barrels. Vinification is protective, with careful ouillage to minimise oxidation, preserving freshness and textural vibrancy. The wine exhibits bright acidity, subtle mineral tension, and a precise expression of the Jura limestone soils, capturing Menigoz & Snuverink’s focus on clarity and low-intervention elegance.
