Alizée and Thibault Tassin are part of a new generation of grower‑producers in the Côte des Bar, Aube, where their family has farmed for generations. They revitalised a historic estate in Celles‑sur‑Ource, converting 1.25 hectares of vineyards to organic practices and focusing on precise, terroir-driven Champagne. Both are deeply involved in vineyard work and cellar management, blending tradition with minimal intervention and a focus on clarity, freshness and minerality.

Soirée d’Hiver 2022 is a Blanc de Noirs Brut Nature made entirely from hand harvested Pinot Noir sourced from their parcels in Celles‑sur‑Ource and Essoyes, planted on chalky, argillo‑calcaire soils. Fermentation occurs with indigenous yeasts and is matured for approximately one year in used oak barrels before tirage. The wine undergoes extended lees ageing, with disgorgement in April 2025 and zero dosage, allowing the purity of the fruit and the limestone-driven energy of the Côte des Bar to shine. Aromatics show red fruits, subtle brioche and toast, while the palate is precise, mineral-driven and elegantly structured, with a persistent, dry finish.
