Victor Gandon is a small grower based in the Aube region of Champagne, working with a micro scale approach that focuses on individual parcels rather than blended regional expressions. The estate is part of a new generation of growers in the Côte des Bar who prioritise organic farming, low intervention winemaking and a strong sense of site identity. Vineyard work is carried out by hand with a focus on soil health, biodiversity and low yields to preserve concentration and balance in the fruit. In the cellar, fermentations are spontaneous with indigenous yeasts and ageing is conducted in a combination of neutral vessels and small oak where appropriate, with minimal sulphur and no attempt to mask vineyard character.

Les Pièces is a parcel driven Champagne sourced from a single vineyard site in the Côte des Bar, where Kimmeridgian and clay limestone soils provide both structure and freshness in a warmer southern Champagne climate. The vineyard is farmed with a strong focus on expressing its individual identity, with careful yield management and hand harvesting at optimal ripeness. The wine is typically composed from Pinot Noir, reflecting the dominant grape of the region, and is vinified in a low intervention style that emphasises texture and site transparency rather than winemaking influence. Fermentation occurs spontaneously and the wine is aged on lees before secondary fermentation in bottle, following traditional Champagne method. The result is a Champagne that is both precise and grounded, showing red apple, pear and citrus peel alongside white flowers, chalk and subtle brioche notes from lees ageing. The palate is finely textured and energetic, with a linear acidity and a saline mineral finish that reflects the chalk and limestone soils of its single vineyard origin.
