Domaine d’Hélène is the young Champagne project of Pierre Hugot, whose family has cultivated vines in Cramant since 1891. After gaining experience with some of Burgundy and Champagne’s most respected domaines, including Comte Liger Belair, Chavy Chouet, Jean Marc Roulot and Suenen, Pierre returned to the family vineyards to establish his own vision. Based in the Côte des Blancs, he works with Grand Cru vineyards in Cramant, Avize and Oger, combining organic and biodynamic principles in the vineyard with a precise, low intervention approach in the cellar. His aim is to let the chalk and Chardonnay speak clearly, producing Champagnes marked by energy, finesse and mineral precision.
Les Avats is a single vineyard Grand Cru Blanc de Blancs from Avize, with the parcel situated on the slope just north of the village. Made entirely from Chardonnay, it is a particularly site specific expression of Avize, combining chalk driven freshness with the concentration and complexity of old vines. More than a decade of lees ageing has given the wine considerable tertiary development, with citrus, white peach, toasted almond, hazelnut, brioche and savoury mushroom notes, while the fine acidity and mineral structure retain freshness.
