Jacques Lassaigne established his eponymous Champagne house in 1972 in Chigny-les-Roses, Marne. Lassaigne farms 10 hectares across Premier and Grand Cru villages including Chigny-les-Roses, Cramant, and Avize. He is known for meticulous vineyard management with a focus on old vines, organic practices, and hand harvesting. All fermentations are with indigenous yeasts, using long élevage on lees in stainless steel, neutral oak, and a combination of cuves. Lassaigne avoids fining and filtration where possible, allowing pure terroir expression to emerge. The house is highly regarded for Champagnes that combine precision, minerality, and aromatic complexity with freshness and balance.

Autour de Minuit is a precise, quietly complex Champagne, Blanc de Blanc from chalk-rich soils. It shows fine, persistent bubbles with notes of citrus peel, white flowers and subtle pastry, underpinned by a strong mineral core. Taut and focused on the palate, it balances depth with freshness, finishing long, saline and composed — a restrained, site-driven expression of Montgueux. Fermented and aged for 3 years in vin jaune barrels from JF Ganevat, giving it a unique oxidative character.
