De Moor is a youthful yet deeply inspired producer in Burgundy, founded by Maud and Vincent de Moor, who bring fresh energy and a reverence for natural winemaking to this historic region. Based in the Chablis area, their vineyards span several appellations including Chitry, Bourgogne, and Chablis itself, planted on classic Kimmeridgian and Portlandian limestone soils that shape each wine’s distinct minerality and tension. Since launching their project in the mid 2010s, De Moor has embraced organic and biodynamic principles, with minimal intervention in the cellar, wild fermentations, little to no sulphur, and no filtration, allowing pure terroir expression and vintage character to shine through.
De Moor’s 2023 Chablis L’Humeur du Temps is a cuvée that captures the interplay of climate and terroir in this cool, historic region. The vineyards are planted on premier Kimmeridgian limestone soils known for their fossilised oyster shell content, which lend the wine its characteristic saline minerality and sharp acidity. The 2023 vintage posed challenges with a late and cool growing season, preserving freshness and aromatic delicacy. Fermentation was spontaneous on indigenous yeasts, and the wine matured in a blend of old oak barrels and stainless steel tanks, with extended lees ageing to add texture and complexity. The name “L’Humeur du Temps” (“The Mood of the Times”) reflects the wine’s vibrant, expressive nature and the climatic nuances of the vintage. The bouquet reveals flinty minerality, lemon peel, green apple, and subtle herbal notes. On the palate, it is taut and precise, with refreshing acidity, a chalky texture, and a lingering mineral finish that speaks unmistakably of classic Chablis terroir.

All orders are shipped via UPS Express Delivery. The estimated delivery time is between 3 to 8 working days from the moment of processing.
We offer shipping to all the countries mentioned above for a flat fee of £18.99 per order, regardless of size or weight. Unfortunately, we cannot offer free shipping to these countries.
Due to internal regulations, we are unable to ship our wines to Sweden or Finland.
As an international customer, we will not charge you UK VAT or taxes. However, based on your country's regulations, you will need to pay customs and handling fees, which are generally around 20%.

We use only sustainable, recycled and recycling packaging that provides the highest standard of protection to the bottles. When possible, your wine is delivered in reused but reliable packaging that significantly helps the environment and also keeps down unnecessary costs, allowing the wines to do the talking.
