Sciara is a winery founded in 2015 by Stef Yim, Hong Kong born, Los Angeles raised, who first trained as a sommelier before pursuing winemaking in California and France. Drawn to volcanic soils, Yim chose Etna for its steep slopes, ancient vines, and the potential for extreme altitude viticulture. His vineyards span many contrade on Mt Etna, from ~600 metres up above 1,500 metres; he works with Pre-Phylloxera and old vines, farming organically, using indigenous yeasts, minimal sulphur, natural fermentations, and when possible neutral vessels or amphorae, to let altitude, soil, and vine age articulate the terroir rather than cellar manipulation.
Centenario 2021 is a red wine from extremely old Nerello Mascalese vines (over 100 years old) planted on volcanic soils (~630 metres altitude in contrade such as Barbabecchi, Nave, Feudi di Mezzo) on Mt Etna. Stef Yim uses spontaneous fermentation with indigenous yeasts; part of the ageing is done in amphora or neutral/older vessels, possibly fibreglass, to highlight texture and soil expression. The wine shows red cherry and wild berry fruit, grainy tannins, savoury lava-sand savour, and an energetic yet poised mouthfeel, with both concentration and purity.
