Les Chaumes des Lies is the project of Margaux Rivaux and Lothar Galloo, working high altitude and limestone driven parcels across the greater Côte de Beaune. Though still in its early vintages, the direction is already defined: organic farming, careful yield control and a strict avoidance of new oak. The aim is to articulate site with clarity and tension, favouring lift and structural precision over weight. Elevage takes place exclusively in older barrels, allowing soil and vintage to dictate profile rather than cellar imprint.
Bouzeron is the spiritual home of Aligoté, and in 2023 the combination of limestone soils and a warm growing season produced a wine of both ripeness and drive. Harvested at moderate sugars to retain freshness, the wine opens with lemon peel, green apple and a faint almond note. The palate is taut and chalk edged, with saline tension and fine phenolic grip. There is breadth through the mid palate, yet the finish remains linear and mineral, reflecting Bouzeron’s limestone backbone.
