Domaine de Montille is one of Volnay’s defining estates, its identity shaped in the post war era by Hubert de Montille, a lawyer turned vigneron who built a reputation for uncompromising, ageworthy Pinot Noir built on structure rather than charm. Today the domaine is led by his son Étienne de Montille, who has expanded both the vineyard holdings and stylistic precision, while steering the estate firmly into organic and biodynamic viticulture. From its Volnay heartland, the domaine now works across a significant range of Côte de Beaune sites including Pommard, Corton and Vosne Romanée, alongside a quietly growing presence in white Burgundy through Meursault and Puligny Montrachet. The through line remains consistency of site expression, with a cellar approach that prioritises restraint, fine extraction and long élevage to preserve the inherent tension of each cuvée.

The Bourgogne Pinot Noir sits at the entry level of the domaine’s red wine hierarchy, but is still built on fruit from carefully selected parcels in the Côte de Beaune, primarily declassified or village level vineyards depending on vintage. The style reflects the broader de Montille philosophy in a more immediate form, showing tension and linearity rather than overt fruit sweetness. Fermentations are carried out with partial whole cluster inclusion depending on vintage conditions, with a focus on gentle extraction through infrequent pump overs to avoid overworking the fruit. Elevage takes place in French oak barrels, with a modest proportion of new oak relative to the crus wines, typically over an extended period to allow the wine to settle into its structure. The result is a Pinot Noir that leans towards red cherry, cranberry and wild raspberry, with floral lift, subtle spice and a distinct mineral, slightly chalky backbone. The palate is driven by acidity and fine tannic structure rather than weight, finishing long, dry and quietly savoury.
